A 120hz display is simply capable of refreshing 120 times per second; this does not mean there will be 120 frames of data to display in all situations. If the source is artificial (scrolling animations) then you will as long as the system can render fast enough. If you actually have 120fps video, that would work too.
What are you talking about? I'm saying it's a lie that they left it out because of supply issues. Samsung Display was able to make plenty of displays for their own samsung phones AND two OnePlus phones that both have adaptive 120hz displays. Plus the 90hz displays they made for the regular oneplus 8. It's not a supply issue. It's an apple issue.
The iPhones ever since the iPhone X has had 120hz touch sampling rate which gives a smoother feeling even without the inclusion of a 120hz refresh rate screen. Normally 60hz display phones have 60hz touch sampling but iPhones do not. So it still feels very responsive, although maybe not much as your S20 (240hz touch sampling rate).
